Why does my dog eat bird poop?

Sometimes in the backyard he looks at the floor very closely to find bird poop scattered on the floor. When I catch him licking it he looks up and his mouth salivates and it starts to shake uncontrollably. Does anyone know why he eats bird poop? Is it dangerous?
